Easy Sauteed Spinach

Wash, spin and chop spinach leaves

Ingredients

  • 1 lb. fresh baby spinach
  • 1½ tbs olive oil OR 1 tsp ghee (clarified butter)
  • 1 medium onion, finely chopped 
  • 1 tbs (or 3 cloves) minced garlic
  • salt and pepper to taste
  • 2 tsp fresh squeezed lemon juice
  • 6-7 button mushrooms (optional)
  • sprinkle crushed red pepper flakes (optional)

Directions

  1. Heat oil in large pot over medium heat.
  2. Add onion and sauté 2-3 minutes until onion starts to turn translucent.
  3. Add spinach, salt, pepper and garlic and stir to coat spinach in oil. Continue stirring every 30 seconds until spinach is wilted (about 4-5 mins). Do not continue cooking once spinach is done wilting - immediately remove from heat.
  4. Add lemon juice and red pepper flakes (if desired) and stir. Transfer to a serving dish with a slotted spoon to drain out the juices.
